Whey Protein Cookies

Soft, chewy, high-protein cookies with just 4 ingredients. This whey protein cookie recipe takes 15 minutes and tastes like a real treat.
- 1 cup 250g peanut butter (natural or regular)
- ⅔ cup brown sugar substitute (or regular brown sugar)
- 1 large egg (room temperature)
- ½ cup vanilla whey protein powder (isolate or standard)
- ¼ cup chocolate chips (optional)
Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
In a bowl, combine peanut butter, brown sugar substitute, egg, and whey protein powder. Stir until a thick dough forms.
Fold in chocolate chips if using.
Roll dough into 12 balls (about 35-40g each) and place on the baking sheet.
Flatten each ball slightly with your palm or a fork to about ½ inch thick.
Bake for 12-14 minutes.
Cool on the baking sheet for at least 10 minutes, then transfer to a wire rack to cool completely.
Use whey isolate, not plant protein.
Don’t overbake – pull at 12 minutes.
Cool completely on the tray before moving.
